Keep it simple today.

Open the tin and rinse the beans; no soaking needed. Parsley is an extra, not a must. Bread goes well alongside; check its allergens too.

What you can prepare ahead

Cook just the tomato-and-bean sauce the day before. Cool promptly and refrigerate within 2 hours at 5 °C or below. Heat thoroughly the next day, then add the eggs and cook them fully.

No peppers? Finely grated carrot also works in the sauce. For a completely smooth sauce, cook the tomatoes and vegetables until soft and blend before adding the beans and eggs.
